Red Onion Marmalade

Woodman indicated he would be doing his own can jam this month but I don't see that happening!  Best laid plans and all that.  That said, I have completed my mission for the month.  I wasn't sure what to do with onions, which is the only allium I felt like canning.  A few months ago I did Tigress' Onion Tickled Pink which I highly recommend.  These are the greatest condiment ever.  But alas, they are not really a canning item.  Just a make and eat - keep in the fridge kind of thing so would not qualify for the a Can Jam entry since there is no water bath canning.  Of course you might be able to can them I will have to check into that.

I wanted something sweet anyway so I searched and searched for recipes.  The Ball Blue Book's Red Onion Marmalade with 4 cups of sugar looked like it would do the trick.  So I started the process, wanting to get it in early so Tigress could get her part done before her busy work schedule.  It was the least I could do since she does such a great job of the summary and puts so much time and energy into this.  For those of you who are not familiar with the Can Jam check it out on my widget to the right but I digress.  I wait until today to get my project done.  I had already gathered the ingredients last weekend.  Of course two of the girls got in to my apple juice so I had to quickly put a stop to that so I would have some left for this recipe.  Unfortunately, I did not do the same with the dried cranberries!  I cut up my onions today and open the cabinet to get my cranberries out and they are gone.  One of the girls ate them with oatmeal this week - every day! I have had these cranberries since the holidays so it did not occur to me they would be gone.  Back to the store (after calling two neighbors who didn't have an either).  Upon my return, this recipe went so quickly.  It really was fast and easy and YUMMMMMY!  I'm going to have a little with a pork roast tonight but alone it has a nice sweet, oniony flavor.  I think this might become a household staple.  I'm starting to get a lot of these thanks to the can jam!!

Red Onion Marmalade (Ball Blue Book)
1 1/2 cups thinly sliced, halved peeled red onions
1/2 cup dried cranberries finely chopped
1/4 cup light brown sugar
1/4 cup cider vinegar
1 package powdered pectin
2 teaspoons grated orange peel
3 cups apple juice
4 cups sugar

Saute onions, cranberries, brown sugar and vinegar until onions are translucent.  Combine onion mixture with powdered pectin, orange peel and apple juice in a large saucepan.  Bring to a boil over medium high heat.  Add granulated sugar stirring until dissolved.  Return to a rolling boil.  Boil hard 1 minute, stirring constantly.  Remove from heat, skim foam if needed.  Ladle hot marmalade into hot jars leaving 1/4 headspace.   Process for 15 minutes.

  1. It's amazing how these little "condiments" can perk up a relatively plain meal. I am starting to think the Indians have it right with their chutneys. Then again the Koreans have all those little side dishes too.

    I guess it is just us Amurrucins who have gotten boring. It is time to get rid of the boring with more canning!

  2. I made the same marmalade this month! I didn't like it on toast, but I could imagine it's nice on something savoury.

  3. It was really good on pork roast! You should give it a try.

    I love Korean food!! My best friend owns a Korean grocery store and I could spend a fortune there! We have a couple good restaurants in Indy that load your table with little bowls of pickled stuff.
